This past weekend was one of the best weekends I’ve had in a long while. On Saturday, my boyfriend Jack and I went apple picking at Brooksby Farm in Peabody, Massachusetts–we had a blast!
We opted to go with the biggest bag the orchard offered which left us with close to 30 pounds of apples! We decided to use the apples to try out some recipes I had pinned on Pinterest, because who doesn’t love fresh apple desserts in the fall?! We made caramel apple pie cookies, apple crisp, and a classic apple pie! We used pretty simple recipes that anyone, even I, could make!
These caramel apple pie cookies are essentially just miniature, addictive, apple pies. In order to make these we needed apple pie filling (duh!), so we used the filling recipe from apple crisp for all of our apple treats! Although I messed up the recipe a little bit, the cookies still tasted delicious!
The apple crisp was definitely my favorite! We followed this recipe but we added a little bit of caramel on top for our own little twist to the traditional recipe. The apples cooked perfectly and the topping turned out amazingly!
Finally, we decided to make an apple pie using the left over apple filling from our other recipes. We wanted it to be “perfect'” so we latticed the top of the pie; this took a lot of patience and team work! We essentially combined the cookie recipe and the apple crisp recipe to create the pie we wanted. It turned out surprisingly well considering neither of us had baked a pie before!
I highly recommend serving all of this with vanilla ice cream, and caramel sauce…so good!
